At the beginning of the 20th century, the first espresso machines made in Italy revolutionized coffee preparation. Espresso, extracted at around 9 bar of pressure, changed the way coffee was consumed. Due to their size and high purchase price, these technically innovative coffee machines were long reserved for coffee bars. Pressure-based coffee preparation and the lisciveuse his wife used to wash laundry inspired Alfonso Bialetti. He developed the functionality of the screw-top pot, the Mokka Express. Subsequently, the first moka pot saw the light of day in 1933. The design of this iconic pot is by Paul Campani. The shape of the classic Mokka Express model has remained virtually unchanged since the 1940s.

Since then, the Bialetti has been considered the flagship of Italian coffee tradition. Due to its low purchase price and compact size, the moka pot is known and popular far beyond Italy's borders. In recent years, the company has struggled with fierce competition from capsule machines, fully automatic coffee machines, and the increasing trend toward portafilter machines in private households. Which coffee is suitable for the Bialetti moka pot?

In principle, any roast, from light to dark, can be prepared in the Bialetti. Light roasts for filter coffee taste quite fruity with pronounced acidity, while dark roasts for espresso have hardly any acidity but all the more roasted aroma and bitterness. Medium roasts from our Balanced & Sweet category are best suited. These coffees impress with their balance between sweetness, roasted aroma, and acidity.

What grind size is needed for the Bialetti screw-top jug?

The grind size is crucial for the flavor, especially in a Bialetti. If you grind too finely, the coffee will taste bitter and burnt. If you grind too coarsely, the coffee will taste acidic and weak. The correct grind size for a moka pot is between espresso (very fine – like flour) and filter coffee (medium – like large grains of sand), and is similar in size to fine grains of salt.

When should I remove my Bialetti from the stove?

As soon as coffee starts pouring out of the top spout, you can turn off the stove and briefly remove the moka pot from the stove. The residual heat from the stove and the steam in the bottom of the pot are enough to force the coffee to flow upwards. Leaving the pot on the stove at full heat will only burn the coffee.

Why should you pour hot water into the Bialetti?

If you use cold water to prepare your coffee in a moka pot, it will take longer to heat up on the stove. This heats up not only the water, but also the pot, the metal sieve inside, and thus the dry coffee grounds. If the heating takes too long, the coffee grounds in the sieve will burn, and your mocha will taste bitter and burnt. Therefore, it's better to fill your screw-top pot with hot or boiling water.
