Mocha pot preparation

Moka Pot Coffee

Moka pot coffee is considered filtered coffee because the pressure with which the water is pushed up through the metal sieve by steam formation does not exceed two bar. Nevertheless, you can prepare a full-bodied mocha with your Bialetti, which, due to its higher viscosity, appears significantly stronger than coffee prepared with other filter coffee methods. We'll explain what you should pay attention to during preparation.

What you need for Moka Pot coffee

Here's a guide for good Moka Pot coffee

1. First, bring water to a boil. While it's boiling, grind the coffee fresh. The grind size should be finer than for filter coffee but not as fine as for espresso. The amount varies depending on the size of the moka pot.

2. Then, fill the bottom chamber of the moka pot with hot water, just below the valve.

Tip: If you were to fill it with cold water, the brewing process would take longer. This would cause the moka pot to overheat significantly and burn the dry coffee grounds in the basket. The coffee would then taste bitter and have a metallic aftertaste.

3. Next, insert the coffee filter basket, fill it with ground coffee, and level the coffee bed with your finger.

Tip: Optionally, you can insert an Aeropress filter into the moka pot. This filters out fine particles from the coffee that would otherwise pass through the coarse metal sieve.

4. Now place the pot on the stove and select medium (gas stove) to high (electric stove) heat. If you are using an induction cooktop, at least the bottom of the moka pot must be made of ferromagnetic steel.

5. Since you filled it with hot water, the brewing process on the stove will be relatively quick. Pay attention to when the coffee starts flowing upwards through the spout. The color will initially be dark brown and gradually lighten.

6. The coffee turning pale is a sign that little water is flowing up. Remove the moka pot from the stove before a sizzling sound is audible and no more coffee is flowing from the spout.

7. It's best to serve the coffee immediately. Otherwise, place the moka pot on a damp cloth to interrupt the brewing process.
