Coffee from a moka pot is considered filter coffee, as the pressure with which the steam is forced upwards through the metal sieve does not exceed two bars. Nevertheless, you can still make a full-bodied mocha with your Bialetti, which, due to its higher viscosity, has a significantly stronger flavor than other filter coffee preparation methods. We'll explain what you should pay attention to when preparing it.

Here are instructions for good coffee from the moka pot

1. First, bring water to a boil. Meanwhile, grind the coffee freshly. The grind should be finer than for filter coffee, but not as fine as for espresso. The amount varies depending on the size of the moka pot.

2. Then fill the lower container of the moka pot with hot water up to just below the valve.

Tip: If you add cold water, the brewing process will take longer. This will cause the moka pot to overheat and burn the dry coffee grounds in the sieve. The coffee will then taste bitter and have a metallic aftertaste.

3. Then insert the coffee sieve, fill it with ground coffee and smooth the coffee bed with your finger.

Tip: Optionally, you can use an Aeropress filter in your moka pot. This will filter out fine coffee particles that pass through the coarse metal sieve.

4. Now place the pot on the stovetop and set the heat to medium (gas stove) to high (electric stove). If you're using an induction cooktop, at least the base of the moka pot must be made of ferromagnetic steel.

5. Since you've added hot water, the brewing process on the stovetop is relatively quick. Notice when the coffee starts flowing upwards through the spout. The color will start out dark brown and gradually become lighter.

6. If the coffee turns white, it means that the water flowing upwards is low. Remove the moka pot from the stove before you hear a hissing sound and no more coffee flows through the spout.

7. It's best to serve the coffee immediately. Otherwise, place the moka pot on a damp cloth to pause the brewing process.
