Brewing Filter Coffee with a Pour-Over Dripper

The pour-over dripper, for example the V60 from Hario, is a widely used brewing method for filter coffee. Filter coffee gained its bad reputation due to the use of unsuitable supermarket coffees and brewing errors. However, if you observe a few parameters and use a base product specially roasted for filter coffee, you will get an extremely aromatic cup of coffee.

What you need for filter coffee preparation

With these instructions, you'll brew the perfect cup of filter coffee:

1. First, bring the water to a boil. If you use an electric gooseneck kettle, you can pour precisely into the pour-over dripper and control the water temperature.


2. While the water is heating, fold the paper filter along the seam, place it in the pour-over dripper, and set it on your chosen server. Folding along the seam ensures the paper filter fits perfectly into the dripper's shape when pouring.

3. Now, weigh the coffee amount on your scale and select a medium grind size on your grinder.

Tip: The grind size must be adjusted to the amount of water. The brewing time should always be around 2:30 minutes, regardless of whether it's for 250ml or 500ml of water. Therefore, you need to grind coarser for 500ml of water than for 250ml.

4. Rinse the paper filter with hot water to remove unwanted paper taste and pre-warm the server. Then, discard the water and add the freshly ground coffee to the filter.

5. Now begin the brewing process. Start the timer on your scale and pour about twice as much water as coffee (1g = 1ml) onto the coffee bed until it is completely covered.

Stir with a wooden paddle to break up clumps. This process ("blooming") ensures even extraction, as gases escape from the freshly roasted coffee.

6. After 30 seconds, start pouring the remaining water into the pour-over dripper. The stream of water should be poured in spiral motions from the outer third to the center. Towards the end, pour centrally without movement to maintain the water level.

7. After 2:30 minutes, all the water should have passed through. Discard the coffee filter and enjoy your cup of filter coffee. Cheers!
